Chef Paolo’s Culinary Odyssey

Warm and welcoming Cloudland’s Italian transports you to the plush Italian countryside with every morsel, every bite. Part of this authentic experience comes from our team of talented and accomplished chefs. Chef Paolo Camisotti has shaped his menu around traditional Italian dishes with trusted Italian techniques, fresh local ingredients and a little ‘love’.

Paolo stems from Ferrara in Emilia-Romagna region in Northern Italy, which is known as ‘Pasta Paradise’. More fittingly, Bologna, the capital of Emilia-Romagna, is known throughout Italy as the culinary epicentre of ‘filled pasta’ with the Classic Tortellini, filled with cheese or meat being one of the most favoured dishes. The tortellini shape symbolises the navel of Venus. As Paolo attests, no classic tortellini would be complete without a generous compliment of Parmesan cheese, which could easily be described as the ‘flavour of Emilia-Romagna’, as there is almost no local dish that does not call for at least a spoonful of it!

Paolo has always been involved in food somehow, his family had a butcher shop, a farm and a bakery.

“I’ve always had a passion to make fresh handmade pasta and I was lucky enough to hone this skill while working in previous restaurants over the years. It’s my favourite thing to do as a chef”

Paolo’s speciality dish is the Ragu with Prosciutto di Parma, which he has created Cloudland’s very own interpretation – ‘Paolino’s Tagliatelle’, which is available for lunch and dinner in the Cloudland Restaurant. Paolo’s culinary journey continues at Cloudland’s Restaurant and he’d love nothing more than for you to join him and his team in exploring the authentic, classic tastes of Italy.
